Pimento Cheese

Pimento cheese is a classic Southern-style dip that can be enjoyed as an appetizer alongside vegetables or crackers, a spread in your sandwiches and burgers, or as a dip for roasted potatoes. Either way, it's the perfect versatile lunch. This homemade version of pimento cheese takes only 10 minutes to whip up, and it's simply fantastic.

Pimento Cheese
Ingredients for Pimento Cheese:
Extra sharp cheddar cheese - 2 cups (8 oz) (shredded)
Cream cheese - 8 oz. (at room temperature)
Canned diced pimento peppers - 1 (4-oz) can (drained)
White onion - 1/2 cup (thinly sliced)
Mayonnaise - 1/3 cup
Tabasco sauce - to taste
Garlic powder - 1/4 tsp.
Smoked paprika - 1/4 tsp.
Salt and Pepper - to taste
Method of preparing the Pimento Cheese:
  1. In a large mixing bowl, mix together all ingredients until smooth and even.
  2. Taste the spread, and season with more salt and pepper, if needed.
  3. Serve immediately with vegetables, crackers, or toasted bread on the side.
  4. You can refrigerate pimento cheese in a sealed container for up to 4 days.
Chef's Tip:
If you want to tone the spiciness down, swap the canned pimento peppers with canned roasted red bell peppers.
