Bruschetta with Prosciutto, Ricotta & Figs
Ingredients for Bruschetta with Prosciutto:
Baguette - 1
Olive oil - as needed
Ricotta cheese - 1 cup
Prosciutto - 4 oz (thinly sliced)
Figs - 5-6 (fresh, cubed)
Method of preparing the Bruschetta with Prosciutto:
  1. Preheat the oven to 400°F(200°C). Cut the bread diagonally into 15 slices, 1/2-inch thick each.
  2. Arrange the baguette slices on a baking sheet. Brush both sides of the bread with olive oil.
  3. Bake the bread on the top rack until golden.
  4. Transfer the bread to a large plate. Use about a tablespoon of the ricotta to butter each baguette slice. Place a nice slice of the prosciutto on top of the ricotta, drizzle a little olive oil on top, and place about 2 slices of fresh fig on each bruschetta.
  5. Serve fresh. Garnish with fresh herbs if you'd like.
