Fish Mappas

Fish mappas coconut fish curry that's extremely popular in the southern Indian state of Kerala. It typically uses pollock or any other sustainably sourced white fish fillets. The fish is cooked in creamy coconut milk and can be served with basmati rice. It will make for a tasty and wholesome meal. Follow the recipe below to learn how to make fish mappas easily at home.

Fish Mappas
Ingredients for Fish Mappas:
Basmati rice - 10.5 oz
Vegetable oil - 1 tbsp. (or sunflower oil)
Onions - 2 large (sliced)
Garlic - 2 cloves (chopped)
Tomatoes - 3 (cut into chunks)
Tikka curry paste - 3 tbsp.
Coconut milk - 14 oz. can
White fish fillet - 4 (about 2 oz each) (cut into 2-inch chunks)
Coriander - a handful (roughly chopped)
Method of preparing the Fish Mappas:
  1. Cook the rice following pack instructions. Next, heat the oil in a large, wide saucepan over medium heat. Add the onions and cook for 5-10 minutes.
  2. Make sure the onions begin to soften and start to color. Now, add the garlic and tomatoes. Fry for 2 minutes. Add the curry paste and fry for another 2 minutes. Pour in the coconut milk and bring to the boil.
  3. Add the fish to the pan and simmer gently for 5-8 minutes. Turn off the heat and sprinkle the coriander over the curry. Serve with the rice.
