Meatloaf Cupcakes

Make your usual meatloaf more fun with these cute meatloaf cupcakes! This recipe is a great way to get your protein in and surprise guests.

Ingredients for sauce:
Brown sugar - 1 tbsp.
Ground mustard - 1 tsp.
Spicy chili sauce - 1/2 cup
Ingredients for meat balls:
Ground beef - 1 lbs.
Ground pork - 1 lbs.
Onion - 1
Garlic powder - 1 tsp.
Salt - as needed
Ground black pepper - 1/2 tsp.
Breadcrumbs - 1 cup
Parsley - 2 tbsp. (minced)
Milk - 1/4 cup
Eggs - 2 (whisked)
Ingredients for toppings:
Potatoes - 3 (cooked until tender and cubed)
Egg yolk - 1
Half and Half - 1/4 cup
Salt and Pepper - as needed
Butter - 2 tbsp. (melted)
Method of preparing the sauce:
  1. Mix all ingredients together and set aside.
Method of preparing the meat balls:
  1. Preheat your oven to 350°F. Prepare the meatloaf combining all ingredients in a bowl, mix well, but do not overhandle the mixture, as it may be too dense. Chill.
  2. Spray a cupcake tin with nonstick cooking spray, filling each with a small handful of meat mixture. Press the mixture down gently until it is completely filled.
  3. Spread a teaspoon of the sauce on top and bake for about 30 minutes, until the meat is cooked through.
Method of preparing the toppings:
  1. Whip the potatoes with the egg yolk, half and half, salt and pepper, until smooth.
  2. Stir in the melted butter and fill a piping bag with the potato mixture. Set aside.
  3. Once the meat has cooked through, turn on the broiler and pipe some potato mix over each cupcake.
  4. Broil for about 2 minutes, until lightly browned. Enjoy!
