Spicy Watermelon Popsicles

Watermelons are a great summer fruit. But have you ever tried watermelon popsicles? This popsicle consists of both tomato and jalapeño, but is not overly sweet or spicy. The watermelon balances that. It is extremely refreshing and healthy. Plus, the heat from the peppers keeps it bright and delicious.

Whoa there! Before you throw away all those watermelon rinds, how about turning them into a sweet treat or a jam instead?

Ingredients for Spicy Watermelon Popsicles:
Watermelon - 3 cups (seedless)
Tomatoes - 2
Jalapeño - 2
Method of preparing the Spicy Watermelon Popsicles:
  1. Cut a watermelon in half and then into slices. Remove the rind, and cut the slices into 1-inch cubes.
  2. Peel the tomatoes. Blend both the watermelon and tomatoes.
  3. Use a strainer to remove the large chunks.Thinly slice the jalapeño peppers and add them to the tomato-watermelon mixture.
  4. Refrigerate this mixture for an hour to infuse the juice with heat. Pour the mixture into popsicle molds and freeze for 6 hours.
Chef's Tip:
Add a dash of vodka and skip the freezing to make this an interesting twist on the famous Bloody Mary cocktail.
