Banana Bread Truffles

Got banana bread leftovers? Or, for that matter, any bread leftovers? Try upcycling them into these dainty little bread truffles. They will be the perfect match for every meal, whether as sweet appetizers, in between two meals or as a finishing sweet touch.

Serves: 24
Difficulty Level: Medium
Ingredients for truffles:
Bananas - 3
Butter - 1/3 cup (melted)
Sugar - 1/2 cup
Egg - 1 (beaten)
Vanilla Extract - 1 tsp.
Baking soda - 1 tsp.
Salt - 1 tsp.
All-Purpose flour - 1 1/2 cups
Ingredients for cream:
Butter - 1/4 cup (softened)
Cream cheese - 4 oz.
Powdered sugar - 3/4 cup
Vanilla Extract - 1 tsp.
Ingredients for chocolate crust:
Dark chocolate - 2 cups (chopped or chips)
Coconut oil - 3 tbsp.
Dried bananas - 24 pieces (for garnish)
Method of preparing the truffles:
  1. Preheat oven to 360°F. Grease a long baking pan.
  2. Mash the bananas and add the rest of the ingredients. Pour into the pan and bake for 50 minutes. Let cool completely.
  3. Crumble into a bowl and set aside.
Method of preparing the cream:
  1. Using an electric mixer, beat the cream and butter. Add the powdered sugar and vanilla.
  2. Mix the batter with the crumbled banana cake. Line a baking sheet.
  3. Using an ice cream scoop, make equal-sized balls and arrange them evenly spaced on the baking sheet. You should have 24 balls.
  4. Chill in the fridge for at least 10 minutes, and no more than an hour.
Method of preparing the chocolate crust:
  1. Melt the chocolate with the coconut oil. Dip each banana ball in the chocolate and top with a slice dried banana. Chill in the fridge 15 minutes before serving.
