Vegan Blondies

Even if you're the kind of person who prefers their cookies crunchy, we have a gut feeling you'll find these soft, rich delights irresistible. On top of all that, it's dairy-free and will be ready in less than 30. How about that?

Ingredients for blondies:
Flaxseed - 1 tbsp.
Salt - a pinch
Baking soda - 1/2 tsp.
White sugar - 1/4 cup
Brown sugar - 6 tbsp.
Margarine - 6 tbsp.
Vanilla Extract - 1 tsp.
Date honey - 1 tbsp. (to make your own, mash 1-2 dates in boiling water)
Chocolate chips - 1 1/2 cups
Method of preparing the blondies:
  1. Mix the flaxseed with 3 tbsp water. Let sit 10 minutes. Preheat oven to 360°F. Line a 9x9 inch baking dish.
  2. In a bowl, whisk the flour, salt and baking soda.
  3. In another bowl, using an electric mixer to beat the sugars and margarine until fluffy.
  4. Mix moist ingredients into dry ones. Add the vanilla extract, date honey, and flaxseed mix and stir until smooth.
  5. Add in the chocolate chips. Save some aside for garnish.
  6. Pour into the baking dish, top with the rest of the chocolate chips, and bake for 15-17 minutes or until the corners brown, but no longer.
  7. Let cool before cutting into cubes and serving. Enjoy!
