Classic Eggs Benedict

Is there a better way to pamper yourself or express how much you care for someone first thing in the morning than preparing a creative and delicious breakfast? And you can never go wrong with this classic breakfast recipe - Eggs Benedict. Best of all, now you won’t have to go to a restaurant to enjoy it, just prepare it at home.

Classic Eggs Benedict
Ingredients for Hollandaise sauce:
Butter - 1/2 cup
Egg yolk - 3
Lemon juice - 1 tbsp.
Dijon mustard - 1 tsp.
Salt - 1/4 tsp.
Cayenne pepper - a pinch (optional)
Ingredients for Eggs Benedict:
Salt - to taste
English muffins - 4 (or your choice of bread)
Ham or bacon - 8 slices
Eggs - 8
Green onions - to garnish (or any greens of your choice)
Method of preparing the Hollandaise sauce:
  1. Melt the butter and set aside. Process the rest of the ingredients and process in a blender until smooth.
  2. Slowly drizzle in the butter until uniform.
Method of preparing the Eggs Benedict:
  1. Toast the English muffins. Once they cool down, butter them.
  2. Cook the bacon until browned, about 2-3 minutes on each side. Top each muffin with a piece of bacon or ham.
  3. Now we poach the eggs. Boil water with a drop of vinegar and reduce to a simmer. Stir the water to create a whirl.
  4. Crack the egg into a bowl, and while the water still whirls lower it gently into the water. Let cook for 3 minutes and remove from the water with a slotted spoon, onto a paper towel to absorb excess water.
  5. Put the eggs on the bacon-topped English muffin, then cover with the sauce and garnish with greens.
