Stuffed Mushrooms

Any cook should have a good recipe for stuffed mushrooms in their repertoire. Not only are they delicious, but they're also easy to prepare and a great party snack. Because mushrooms are low in calories, they make a good ‘vehicle’ for delivering heavier foods like cheeses for charcuterie, adding a ton of flavor without piling on excessive calories. Variations of stuffed mushrooms exist, but today’s recipe is for mushrooms stuffed with yummy cheese and refreshing herbs.

Stuffed Mushrooms
Ingredients for Stuffed Mushrooms:
Button mushrooms - 5 1/2 cups (stemmed and finely chopped)
Unsalted butter - 2 tbsp.
Garlic - 2 cloves (crushed)
Breadcrumbs - 1/3 cup
Cream cheese - 1/2 cup (softened)
Parsley - 2 tbsp. (freshly chopped)
Thyme - 1 tbsp. (freshly chopped)
Salt and Pepper - as needed
Olive oil - as needed
Method of preparing the Stuffed Mushrooms:
  1. Preheat the oven to 350°F (180ºC). Grease a baking tray. Place mushroom caps on the baking tray.
  2. In a medium-sized pan over medium heat, melt the butter. Add chopped mushroom stems and cook for 5 minutes or until most of the moisture is out. Add garlic and cook for 1 minute until fragrant, then add breadcrumbs and let toast slightly for 3 minutes. Season with salt and pepper. Remove stuffing from the heat and let cool slightly.
  3. In a large bowl, mix together the mushroom stem mixture, Parmesan and cream cheese, parsley, and thyme. Season with salt and pepper. Stuff the mushroom caps with the filling and sprinkle more Parmesan cheese on top.
  4. Bake for 20 minutes, until mushrooms are soft and the tops are golden.
