Chicken Recipes: Paprikash, Biryani and Cordon Bleu

Chicken Paprikash
Be it in a stew, with rice, or as a centerpiece, chicken has become a staple of many cuisines worldwide. This creamy Hungarian stew is extremely easy to make and is absolutely delicious. Traditionally, the chicken is cooked by simmering, but we suggest browning it beforehand.
Ingredients for Chicken Paprikash:
Chicken thighs and legs - 3 lbs. (bone-in, skin-on)
Large onions - 3 (diced)
Butter - 2 tbsp.
Sweet paprika - 4 tbsp.
Sour cream - 1/2 cup
All-Purpose flour - 3 tbsp.
Chicken Biryani
This rice pot from the Indian subcontinent is rather similar to pilaf, with several key differences: biryani typically has a larger meat-to-rice ratio, is more aromatic, has more gravy, and is traditionally layered. Consequently, it requires a bit more preparation.
Ingredients for Chicken Biryani:
Chicken thighs -  2 lbs (bone-in, skin-on)
Medium-sized onions - 2 (thinly sliced)
Butter - 2 tbsp. (preferably clarified butter (ghee))
Garlic - 3 cloves (chopped)
Garam masala - 1 tbsp.
Fresh ginger - 1/2 tbsp. (grated)
Ground cinnamon - 1/2 tbsp.
Turmeric - 1/2 tbsp.
Cardamom pods - 8 (whole)
Yogurt - 1/2 cup
Cilantro - 2 tsp. (finely chopped)
Mint - 1 tsp. (finely chopped)
Saffron - 1/2 tsp. (optional)
Basmati rice - 1 1/2 cup
Chicken Cordon Bleu
Time to bring some gourmet cuisine into the mix. This Swiss dish is a cutlet (or schnitzel) wrapped around ham and cheese. While this may sound simple enough, this crumbed delicacy can require a bit of work.
Ingredients for Cordon Bleu:
Chicken breasts - 3 (boneless and skinless)
Breadcrumbs - 1 1/2 cups
Garlic powder - 1 tbsp.
Onion powder - 1 tbsp.
Swiss cheese - 10 slices
Ham - 8-10 slices
Eggs - 2
All-Purpose flour - 2 tbsp.
Butter - 2 tbsp.
Garlic - 1 clove (minced)
All-Purpose flour - 2 tbsp.
Milk - 1 1/2 cup
Dijon mustard - 1/4 cup
Salt and Pepper - as needed
Vegetable oil - as needed
