Salted Caramel Lollipop 

Salted caramel is delicious - no doubt about that, but it can be quite sticky and inconvenient to eat. The solution? Turn salted caramel into a lollipop with this recipe!

Ingredients for lollies:
Honey - 1/2 cup
Water - 1/4 cup
Heavy cream - 3/4 cup
Sea salt - 1/2 tsp.
Butter - 4 tbsp. (browned)
Lollipop sticks - as needed
Vanilla Extract - 1/2 tsp.
Method of preparing the lollies:
  1. Stick the lollipop sticks into the molds and set aside for the time being.
  2. In a small saucepan, melt butter and brown, until fragrant and golden. Set aside.
  3. In a separate pan, heat cream and 1/2 teaspoon of salt, and heat to a gentle simmer. Stir in vanilla. Turn off the heat and set aside.
  4. In a 4qt saucepan fitted with a candy thermometer, heat sugar, honey, and water, taking care to stir, only to moisten. Once the mixture has melted, try not to stir, and heat to 300°F.
  5. Add the hot cream mixture to the hot butter mixture, and stir until smooth. Return to the heat and cook over medium heat until it reaches 260°F.
  6. Pour into the mold and let cool for 30 minutes.
