Crunchy Chicken Stuffed Waffle Pops
Ingredients for Chicken:
Chicken breast - 3 lbs. (boneless and cut into medallions)
Eggs - 3
Milk - 3 tbsp.
Salt and Pepper - to taste
Cornflakes - 4 cups (crushed )
Ingredients for Waffle Batter:
Milk - 2 1/2 cups
Vegetable oil - 2 tbsp. (or canola oil)
Eggs - 2
Method of preparing the Chicken:
  1. Preheat oven to 430°F (220°C) and line a baking sheet.
  2. Combine the eggs, milk, salt, and pepper. Add the chicken and mix.
  3. Place crushed corn flakes in a large shallow bowl and dredge the chicken in it to coat.
  4. Bake the chicken for 14-18 minutes until cooked through. Place a wooden skewer into each chicken piece.
Method of preparing the Waffle Batter:
  1. Preheat the waffle iron and spray with some nonstick spray. Whisk the waffle batter ingredients in a large mixing bowl.
  2. When the chicken pieces are ready, grab each one separately, dip into the waffle batter, and place on the waffle iron (with the skewer sticking out).
Chef's Tip:
Mix mayonnaise, maple syrup or honey, and mustard for one delicious dip.
