Bright orange and full of healthy nutrients, carrots are the perfect ingredient for any dessert. These vegan donuts are not just packed with nutritious carrots, they're also vegan!
Preheat the oven to 350ยฐF (180ยฐC). Grease a donut pan.
In a small bowl, combine the 1/2 cup soy milk and apple cider vinegar. Set aside for around 10 minutes.
While youโre waiting, whisk together the dry ingredients (flour to nutmeg) and the wet ingredients (carrots to vanilla) separately, and then combine the two.
Transfer the batter to a piping bag. Pipe the batter into the pan, and bake for 10 minutes.
While the donuts are baking, make the glaze by adding 1/4 cup soy milk to the powdered sugar and cream cheese. Allow the donuts to cool completely before adding the glaze and topping with walnuts.
Chef's Tip:
If you don't have a piping bag, use a plastic bag and cut off about 1/2-inch from the bottom corner to make a makeshift piping bag.
