Divine Cherry Clafoutis

A cherry clafoutis (pronounced cla-foo-tee) is a rich custard dessert that is studded with ripe, sweet cherries, and dusted with powdered sugar. While French desserts may sound intimidating, making a clafoutis couldn’t be any easier. So go ahead and surprise your guests this summer with this delicious dessert.

Ingredients for Clafoutis:
Cherries - 2 cups (pitted)
Unsalted butter - 1 tbsp. (softened)
Eggs - 3
Milk - 2/3 cup
Salt - 1/2 tsp.
Vanilla Extract - 1 tsp.
Almond extract - 1/4 tsp. (optional)
Powdered sugar - 1/4 cup
All-Purpose flour - 2/3 cup
Method of preparing the Clafoutis:
  1. Pit the cherries: remove the stem, and hold the cherry firmly between finger and thumb. Using a chopstick, press down through the top of the cherry, and pop the pit out.
  2. Preheat the oven to 350°F. Butter a 9-inch pie pan, then sprinkle it evenly with 1 tbsp. powdered sugar. Shake out the excess. Arrange the pitted cherries evenly in the buttered pie dish.
  3. In a blender, add the eggs, flour, the rest of the sugar, salt, milk, vanilla extract, and almond extract (if using). Blend on a high speed until the batter is fully mixed and frothy – about 30 seconds to 1 minute. The batter will be very thin.
  4. Pour the batter into your pan, and bake until the custard is golden brown and firm -  about 30-35 minutes. Once baked, allow the clafoutis to cool slightly, and then dust it with powdered sugar.
