You may have never really considered it, but many fruits go along well with pork chops. This time we're coupling nectarines and pork, but we invite you to take this recipe as inspiration for experimentation. What fruit will you choose next time you make this dish?
In a bowl mix the nectarine and onion quarters with 2 tbsp. butter and season with salt and pepper to taste.
On a skillet, cook for 8 minutes, stirring frequently until the vegetables have softened. Set aside. Clean the skillet for cooking the pork chops.
Rub the pork chops with more butter all around. Season with salt and pepper.
Cook the pork chops on the skillet on medium heat. Cook for 3 minutes on each side until they are well cooked.
Cut the vegetable quarters into ¼ inch slices and then add the lemon juice, mustard and mint to the mixture. Pour over the pork chops and serve the meal.
