Moist and Chewy Banana Oatmeal Cookies

Overripe bananas are super healthy, but what if you don’t want to eat them straight out of the peel? Don’t throw them away or leave them for the fruit flies! We say mash them up and make these chewy banana and oatmeal cookies!

Ingredients for Banana Oatmeal Cookies:
Salted butter - 3/4 cup (softened)
Brown sugar - 1 cup (packed)
White sugar - 1/2 cup
Egg - 1
Vanilla extract - 1 tsp.
Overripe bananas - 1 cup (mashed)
All-Purpose flour - 1 1/2 cups
Cinnamon - 1 1/2 tsp.
Baking soda - 1 tsp.
Cornstarch - 1/4 tsp.
Rolled oats - 3 cups
Method of preparing the Banana Oatmeal Cookies:
  1. Mix together the butter, brown sugar, sugar, egg, vanilla extract, and mashed bananas until well combined.
  2. Add the flour, cinnamon, baking soda, and cornstarch, and mix until combined. Stir in the oats.
  3. Spoon tablespoons of dough onto a cookie sheet covered with parchment paper. Flatten the dough a bit, so you have nice thick discs. They will spread a little bit more when baked.
  4. Bake for 10-12 minutes or until the edges just start to turn golden.
  5. Remove from the oven and leave them to cool for 3-4 minutes, then move them to a cooling rack to finish cooling.
