During those hot summer days, many of us don't feel like eating anything heavy. Ideally, munching on some crunchy vegetables or having a refreshing pasta works best. Ingredients for vinaigrette:
White wine vinegar - 1/3 cup
Olive oil - 1/4 cup
Garlic - 2 clove (minced)
Dijon mustard - 1 tbsp.
Sugar - 1/2 tsp.
Dried basil - 1/2 tsp.
Dried oregano - 1/4 tsp. (dried)
Salt - 1/4 tsp.
Black pepper - 1/4 tsp.
Red pepper flakes - 1/4 tsp.
Ingredients for salad:
Pasta - 16 oz.
Zucchini - 1
Carrots - 1 1/2 cups
Parsley - 1/2 cup
Red onion - 1/2
Cheddar cheese - 1 1/2 cups (cubed, optional)
Method of preparing the salad:
  1. Whisk together the vinaigrette ingredients and set aside. Cook and drain the pasta.
  2. Prepare the vegetables. Thaw anything frozen, wash anything raw, and cut everything into cubes. Discard seeds and stems.
  3. Place pasta, cheese, and vegetables into a serving bowl and dress in the vinaigrette.
