These pesto-stuffed shells are the perfect comfort food. They are stuffed with two kinds of cheese, pesto, and spinach and can make for the perfect evening snack. You can also surprise your guests with these delicious treats.
Completely thaw the spinach and then squeeze out as much of the moisture as possible. Add it to a large bowl along with the ricotta, mozzarella, pesto, and egg. Stir well then refrigerate until it's ready to be used.
Cook the pasta al-dente. This is important so that it won't tear when you stuff it.
Preheat the oven to 350ยบF (180ยฐC). Spread 1 cup of pasta sauce on the bottom of a large casserole dish. Next, stuff each shell with the pesto mix. After stuffing them, place the shells in the casserole dish.
Pour the remaining 2 cups of pasta sauce over top of the stuffed shells. Bake the shells for about 30 minutes. Take them out once the sauce is bubbling up around the edges. Serve hot.
