Ready to Make the Most Scrumptious French Sugar Puffs?

Chouquettes are sugar puffs made from a ‘pate a choux’, a dough made with eggs, flour, butter and water over a stove top. Because this dough is a little tricky, and going even a little off the recipe can lead to a disaster – follow the recipe and instructions to the T, and you’ll end up with the tastiest chouquettes you could dream of.

Ready to Make the Most Scrumptious French Sugar Puffs?
Ingredients for chouquettes:
Water - 1 3/4 cups
Unsalted butter - 1 stick
Sugar - 1 tsp.
Salt - a pinch
Flour - 1 2/3 cups
Eggs - 4 large
Chocolate chips - 1 cup
Ingredients for simple syrup:
Sugar - 1/2 cup
Water - 1/2 cup
Honey - 1 tbsp.
Method of preparing the chouquettes:
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. 
  2. In a medium-sized pot place the water, sugar, butter, and salt. Place over a medium-high heat and bring to a boil. preperation
  3. Once it reaches a boil, make sure the butter has completely melted. Remove from heat and add the flour. 
  4. Mix the flour in using a wooden spoon until it is well incorporated and the dough comes off the sides.  Transfer the dough to a mixer and turn on to medium speed with the whisk or paddle attachment and let it run for a few minutes to allow air into the dough. 
  5. Next, add the eggs in one at a time, making sure that each egg is fully incorporated before adding another.
  6. Transfer the mixture to a piping bag and pipe the dough onto the parchment paper in a circular motion. The base of the chouquettes should be between 2-3 cm wide and about 2-4 cm high. Make sure you leave a distance of about 4-8 cm between each chouquettes because they will rise and spread out in the oven.  preperation
  7. Once you’ve piped all of the dough, sprinkle chocolate chips, granulated sugar, or a mixture of the two over the chouquettes. Place in the oven and bake for 10-15 minutes until they turn golden. DO NOT OPEN THE OVEN while baking, if you do the chouquettes will fall.  preperation
  8. While the chouquettes are in the oven start making the simple syrup. When the chouquettes are ready, take them out of the oven and let them cool. You can brush the simple syrup on them at this point.
Method of preparing the simple syrup:
  1. Place all the ingredients into a small pot over a medium-high heat. Cook until it reaches a boil.
  2. Cook for 4-5 minutes after it has reached a boil and then take off of the heat.
