Lime Fried Chicken Fingers

Finger food is the best, isn't it? Eating chicken when it's already cut into strips is much more satisfying than having to cut a large cutlet with a fork and knife. These fried chicken strips can be sided with a salad or potatoes, or dipped in a sauce of your liking. The kids will enjoy it too!

Lime Fried Chicken Fingers
Ingredients for chicken fingers:
Egg white - 2 (beaten)
Toasted sesame oil - 1 1/2 tsp.
Cornstarch - 2 tbsp.
Salt and Pepper - as needed
Oregano - 1/2 tsp.
Chicken breast - 3 boneless cutlets (cut into strips)
Lime - 1 (cut into 8)
Vegetable oil - 2 cups (for deep frying)
Ingredients for optional Chinese 5 spice mix:
Star anise - 6 whole pods (grinded to powder)
Fennel seeds - 2 tbsp.
Peppercorns - 3 tbsp.
Ground cinnamon - 2 tbsp.
Ground Cloves - 1 1/4 tsp.
Method of preparing the chicken fingers:
  1. In a large bowl, whisk the egg whites, sesame oil, corn starch, salt, pepper, oregano and red pepper flakes.
  2. Toss the chicken strips in the mixture. Let marinate in the fridge for an hour.
  3. Heat the oil in a deep pan until it shimmers. Cook the chicken strips. Let each batch drain on a rack or paper towel.
  4. Serve and drizzle with lime.
Method of preparing the optional Chinese 5 spice mix:
  1. Mix all ingredients together and keep in a sealed container.
Chef's Tip:
The Chinese 5 spice mix can sometimes be found pre-maid in stores. It is very aromatic and offers a deep, warm spiciness.
