Asian Chicken Noodle Soup

This Asian chicken noodle soup is versatile, quick and easy to make. Made with chicken tenders and vegetables, this is a  flavorful well-seasoned stew that you’ll crave again and again! You can add extra winter vegetables such as mushrooms, peas, or carrots.

Ingredients for soup:
Vegetable oil - 1 tbsp.
Garlic - 1 tbsp. (minced)
Ginger - 1 tbsp. (grated)
Fresh lemongrass - 2 stalks (peeled)
Water - 2 cups
Chicken broth - 2 (14-oz) cans (fat-free and less-sodium)
Chicken breast tenderloins - 1 lb (cut into bite-sized pieces)
Angel hair pasta - 4 oz (uncooked)
Fresh cilantro - 1/4 cup (chopped)
Lime juice - 1 tbsp.
Salt - 1/2 tsp.
Green onions - 2 (thinly sliced)
Red chili - 1 (finely chopped)
Method of preparing the soup:
  1. Heat oil in a large nonstick skillet over medium-high heat. Add garlic, ginger, lemongrass, and sauté for 3 minutes. 
  2. Add water and broth, then bring to a boil. Add chicken and pasta. Cook 5 minutes or until chicken is done. 
  3. Remove from heat, and stir the remaining ingredients in. Allow the soup to stand 5 minutes. Discard lemongrass and serve.
