Gluten-Free Mac and Cheese

Make a pasta-less version of the mac-and-cheese you've always wished for. We promise it is just as divine, plus it's easier to make! This dish makes for a perfect gluten-free meal, using cauliflower instead of pasta.

Ingredients for Gluten-Free No-Mac and Cheese:
Unsalted butter - 5 tbsp. (divided)
Small onion - 1 (diced)
Garlic - 1 clove (minced)
Coconut flour - 2 tbsp.
Coconut milk - 1 can (13.6 oz)
Ground mustard - 1/2 tsp.
Salt - 1/4 tsp.
Cheddar cheese - 2 cups
Cauliflower - 1 head (broken and cut)
Parmesan cheese - 1/4 cup (grated)
Ground flaxseed - 2 tbsp.
Method of preparing the Gluten-Free No-Mac and Cheese:
  1. Melt 3 tablespoons of butter in a medium saucepan over medium-high heat. Fry the onion until lightly browned. Add the garlic and cook for 1 minute.
  2. Then, add the coconut flour and stir continuously until lightly browned (for around 5 minutes).
  3. Stir in the coconut milk, mustard, and salt, and stir constantly until they come to a boil. Remove from heat and add the cheddar and cauliflower and mix them in the mixture.
  4. Then, pour it into a baking dish. Combine the parmesan, flaxseeds, and the remaining 2 tablespoons of butter in a small bowl. Use this mixture to top your casserole.
  5. Place in the oven and bake until bubbling or lightly browned (around 30 minutes).
