One Pot Veggie Pasta

The next time you're really hungry and want to whip up something quick and satisfying, try this veggie pasta. You can use whatever vegetables you have on hand, like carrots, mushrooms, or broccoli, and make a hot and delightful plate of pasta. This quick weeknight pasta dish will become your favorite dish in no time. Try it.

Ingredients for One Pot Veggie Pasta:
Olive oil - 1 tbsp.
Garlic - 2 cloves (minced)
Onion - 1 (diced)
Zucchini - 2 (diced)
Red bell pepper - 1 (diced)
Corn kernels - 1 cup
Dried basil - 1/2 tsp.
Oregano - 1/2 tsp.
Red pepper flakes - 1/2 tsp.
Salt and Pepper - to taste
Vegetable broth - 1 1/2 cups
Tomato paste - 2 tbsp.
Pasta - 1/2 lb. (not cooked)
Broccoli - 1 head (cut into florets)
Mozzarella - 1 1/2 cups (shredded)
Flat-leaf parsley - for garnish
Method of preparing the One Pot Veggie Pasta:
  1. Sauté the onion and garlic in a large pot with olive oil over medium heat until the onions are soft and translucent. Then add the rest of the ingredients apart from the broccoli, cheese, and pasta.
  2. Let the sauce bubble and add the broccoli and pasta.
  3. Let simmer uncovered for 4 more minutes and add half of the cheese. Stir.
  4. Turn off the heat, cover with the rest of the cheese, and let stand with the lid on for a minute. Garnish with parsley and serve.
