Gourmet White Salad

This salad would be the perfect elegant starter for a fancy dinner. The Cognac-soaked pear slices are just the tip of it, but they give a luxurious twist to this blue-cheese topped salad. And don't even get us started on the fennel!

Ingredients for salad:
Pears - 2 (peeled and thinly sliced)
Cognac - 1/4 cup (or brandy)
Olive oil - 3 tbsp.
Fennel - 1 (sliced)
Cabbage - 4 cups (chopped)
Water - 1/4 cup
Lemon juice - 3 tbsp.
Honey - 2 tsp.
Salt and Pepper - as needed
Blue cheese - 3/4 cup (crumbled or sliced)
Walnuts - 1/2 cup (toasted and chopped)
Method of preparing the salad:
  1. Soak the pears in Cognac. Lightly roast the fennel slices 2-3 minutes on each side.
  2. Add the cabbage slices and stir fry for another 3-4 minutes.
  3. Then add the pears and rest of the ingredients (apart from the cheese and nuts), and stir 5-6 minutes until everything starts steaming.
  4. Serve with the cheese and nuts toppings.
Chef's Tip:
If you choose not to use brandy or cognac, toss the pears in 1 tablespoon lemon juice to preserve their color and freshness.
