Slow Cooker Ham and Bean Soup

Ingredients for Ham and Bean Soup:
Bean blend - 24 oz. (sorted and rinsed)
celery - 2 stalks (diced)
Onion - 1 (diced)
Carrots - 3 (diced)
Smoked ham - 1 lbs (diced)
Chili flakes - 1/4 tsp.
Garlic - 3 cloves (minced)
Rosemary - 2 sprigs
Thyme - 5-6 sprigs
Bay leaf - 1
Chicken broth - 2 quarts
Canned diced tomatoes - 1 can (with juice)
Salt - to taste
Ground black pepper - to taste
Method of preparing the Ham and Bean Soup:
  1. Using butcher’s twine, tie the fresh rosemary and thyme together.
  2. Place all the ingredients except for the diced tomatoes and salt and pepper into the slow cooker.
  3. Cover the crock-pot and cook on high heat for 4 hours or on low heat for 6 hours.
  4. Add the diced tomatoes and their juice to the slow cooker, season with salt and pepper to taste. Continue to cook the soup for an additional 2 hours on high heat, stirring occasionally.
  5. Remove the herb bundle and bay leaf before serving the soup with crusty bread.
