Death by Chocolate Cupcakes

Instead of buying all the Halloween candy, try making some of the sweets yourself. These chocolate cupcakes are fairly easy to make with the little ones, and your family will have a Halloween to remember. Use the video as a guide for the trickier parts.

Ingredients for Chocolate Cupcakes:
All-Purpose flour - 1 3/4 cup (plus more for dusting)
Confectioners’ sugar - 3 cups plus 1 tbsp.
Baking powder - 2 tsp.
Salt - 1 tsp.
Buttermilk - 1 cup
Vegetable oil - 1/2 cup
Eggs - 2
Vanilla extract - 2 tsp.
Unsalted butter - 2 sticks (room temperature)
White chocolate - 1 cup
Milk chocolate - 6 oz.
Chocolate cookies - for tombstones
Coffee - 3 tbsp.
Cocoa powder - 3/4 cup
Method of preparing the Chocolate Cupcakes:
  1. Preheat the oven to 350°F.
  2. In the bowl of an electric mixer fitted with a paddle, mix 1 3/4 cup flour, 2 cups sugar, 3/4 cup cocoa powder, baking powder, and salt at a low speed.
  3. In a medium-sized bowl, whisk the buttermilk, oil, eggs, 1 tsp. vanilla extract and 1 cup of coffee. Add into the dry ingredients in the mixer bowl, and combine at low speed.
  4. Pour the batter into cupcake pans lined with paper. Bake for 15-18 minutes, or until a toothpick inserted into the center of each cake comes out clean. Leave to cool.
  5. Melt the white chocolate and using a piping bag, make skeleton bones onto parchment paper. Use the video in the link as a guide. Chill for 15 minutes.
  6. Prepare the cookie tombstones: for each cupcake, one cookie. Write R.I.P on the cookie with the white chocolate, as shown in the video.
  7. Now we make the frosting. Melt the milk chocolate and let cool. Beat the butter in a mixer and gradually add the sugar. Mix for a few minutes, then add 1 tbsp. coffee, 1 tsp. vanilla extract and the melted chocolate. You can dissolve the coffee in a little hot water.
  8. Pour the frosting into a piping bag. Frost each cupcake.
  9. You should have some leftover chocolate cookies. Put some in a bag and smash to create crumbs. Sprinkle on each frosted cupcake.
  10. Stick the tombstone cookies and the skeleton bones in the frosting and serve!
