Italian Orzo Salad

Today, we have a special salad recipe for you - Italian Orzo Salad. It uses a little pasta, some healthy green vegetables, along with chickpeas (garbanzo beans). It's filling and refreshing and doesn't require a lot of effort to make. In the photo below is the basic salad, but we've added some extra veggies for flavor and nutrients. Feel free to mix and match even further!

Italian Orzo Salad
Ingredients for vinaigrette:
Olive oil - 1/4 cup
Red wine vinegar - 2 tbsp.
Lemon juice - 1 tbsp.
Garlic powder - 1/8 tsp.
Salt - 1/4 tsp.
Dijon mustard - 1 tsp.
Sugar - 1 tsp.
Ingredients for salad:
Orzo Pasta - 1 cup (uncooked)
Chickpeas (garbanzo beans) - 15 oz. can (drained and rinsed)
Fresh spinach - 4 oz.
Kalamata olives - 1/3 cup
Canned artichoke hearts - 3/4 cup (quartered)
Grape tomatoes - 1 pint
Red onion - 1 (chopped)
Method of preparing the salad:
  1. Whish the vinaigrette ingredients together and set aside.
  2. Cook the pasta in salted water and drain.
  3. Chop the spinach and slice the tomatoes in half. Place them in a large bowl with the olives, roasted red peppers, onion, and artichoke hearts.
  4. Lastly, add the drained orzo and beans to the bowl with the other ingredients. Stir the vinaigrette again and add drizzle over the salad before serving.
Chef's Tip:
Orzo can be a bit more difficult to find than other pastas, but you can use any small-shaped pasta in its place.
