Ingredients for Gochujang Ramen with Tofu:
Firm tofu - 7 oz. (drained)
Gochujang - 2 tbsp. (or sriracha)
Vegetable broth - 2 cups
Water - 1 cup
Instant ramen - 1 package (discard the seasoning packet)
Spinach - 2 cups (fresh)
Green onions - 2 (sliced)
Method of preparing the Gochujang Ramen with Tofu:
  1. Cut the tofu into 1/2-inch cubes. In a small saucepan, add the gochujang, vegetable broth, and water. Whisk properly, making sure that the gochujang is dissolved.
  2. Add the cubed tofu to the pot and place a lid on top. Bring it up to a boil over high heat. As it begins to boil, add the instant ramen noodles. Boil for two minutes until the noodles begin to soften. Now, add 2 cups of fresh spinach and stir it into the hot broth. While the spinach wilts, the noodles will finish cooking.
  3. Sprinkle the green onions over top of the ramen. Serve hot.
Chef's Tip:
If you don't have the exotic Gochujang sauce on hand, any hot red sauce will do!
