Cranberry Glazed Fried Turkey

Come Thanksgiving time, you might as well take a number and stand in line if you wish to use the oven. Why crunch numbers trying to calculate turkey baking times, when you can break tradition with this fried turkey recipe?

Just between you and me, the reason to try turkey wings instead of a full turkey is to free up some much-needed oven space. Question is, are you brave enough?

Orange juice - 2/3 cup
Soy sauce - 3 tbsp.
Vegetable oil - 3 quarts (for deep frying)
All-Purpose flour - 1 1/2 cups
Parsley leaves - for garnish
Method of preparing the fried wings:
  1. Stir buttermilk, salt, and pepper to taste and submerge the wings. Cover and chill for 4-12 hours to brine.
  2. Cook cranberry sauce, orange juice, and soy sauce for 8-10 minutes. Add some salt and let cool.
  3. Pour into a pan 3'' oil and heat steadily.
  4. Whisk flour, pepper, and salt with 2 tbsp of the brine mixture. Discard the remainder.
  5. Coat the wings in the mixture and deep fry. Let cool slightly, dip in the cranberry glaze, and sprinkle some parsley to serve.
