Mint Chip Ice Cream

This healthy version of the mint chip ice cream is great for those who like their desserts less sweet. The recipe combines avocado, bananas, and yogurt, all of which are excellent sources of protein and unsaturated fats. It's super easy to make and requires just a handful of common ingredients from your pantry.

Mint Chip Ice Cream
Ingredients for Mint Chip Ice Cream:
Greek Yogurt - 1/2 cup
Lemon juice - 1 tbsp. (fresh)
Avocado - 1 (peeled and pitted)
Bananas - 3 (frozen)
Mint extract - 1 tsp. (or 1/4 cup chopped fresh mint)
Chocolate chips - 1/3 cup
Method of preparing the Mint Chip Ice Cream:
  1. Blend all the ingredients, except for the chocolate chips, until the mixture is smooth.
  2. Add the chips to the mix, but do not blend again. Transfer to a container and freeze for 4 hours.
Chef's Tip:
You can pour the mixture into popsicle molds too, or enjoy it unfrozen as a morning smoothie.
