Gluten-Free Sweet Waffles

Waffles are for breakfast, right? Well, no. That notion has stayed long enough and this delicious snack can be enjoyed at any time of the day. However, if you want to make sure that your waffles are more nutritious, you can opt for fluffy gluten-free waffles rather than ones with refined flour. These waffles are sweet, tender, fluffy, and crispy on the outside. Moreover, they have a simple, whole-food base of almond flour and eggs.

Gluten-Free Sweet Waffles
Ingredients:
Almond flour - 1 1/2 cups (or any other gluten-free flour)
Baking powder - 2 tsp.
Baking soda - 1/2 tsp.
Almond extract - 1 tsp.
Salt - 1/2 tsp.
Granulated sugar - 1 tbsp. (alternative: 1/4 tbsp. stevia)
Oil - 1 tbsp.
Whole milk - 3/4 cup
Eggs - 4 (separated)
Vanilla extract - 1 tsp.
Method of Preparation:
  1. Preheat the waffle iron. Mix the flour, baking powder, soda, salt, and sugar together in a large bowl.
  2. In another bowl, whip together milk, yolks, vanilla, and oil. Add the milk mixture to the bowl containing the dry ingredients and mix. Use a rubber spatula to slowly fold in the egg whites with the remaining ingredients.
  3. Add the almond and vanilla extracts to the total mixture.
  4. Follow the instructions on the waffle iron or cook for about 3 minutes on each side.
Chef's Tip:
Add honey and cinnamon to the mix, and you have a filling and healthy meal to munch on at any time of the day.
