Olive and Citrus Cake

A unique, aromatic deep flavor. Citrus and olive oil are like watermelon and feta cheese, like chocolate and pretzels, or like salt and caramel; they're complementary opposites. And boy do they complement each other!

Ingredients for cake:
Sugar - 1 cup
Orange zest - from 1 orange
All-Purpose flour - 1 3/4 cups
Almond flour - 1/2 cup
Baking powder - 2 tsp.
Salt - 1 1/2 tsp.
Eggs - 2
Greek Yogurt - 1/2 cup
Orange juice - from 1 orange
Vanilla Extract - 1 1/2 tsp.
Olive oil - 2/3 cup
Method of preparing the cake:
  1. Preheat oven to 375°F. Mix the sugar and orange zest well. Let sit 45 minutes.
  2. In another bowl, whisk together the flour, almond flour, baking powder, and salt.
  3. Add the 2 eggs to the sugar and orange zest mix. Using an electric mixer, beat until smooth and fluffy. Add in the orange juice, yogurt, vanilla extract and olive oil and stir.
  4. Gradually add the dry ingredients to the wet ones and combine.
  5. Grease a round deep baking dish with olive oil and line the bottom with parchment. Add some more olive oil and pour the batter in. Bake for 40-45 minutes.
  6. Allow 20 minutes cooling before serving
Chef's Tip:
To serve, sift powdered sugar over cake and top each slice with a dollop whipped cream.
