Start the day off with something sweet with this mug-sized coffee cake recipe. This is a minuscule version of the classic coffee cake with a cinnamon crumble. We also have a recipe for the full-size cake, here.
Mix 1 tbsp butter with 1 tbsp brown sugar in a large measuring cup until creamy.
Add the egg, sour cream, syrup, and vanilla. Beat until blended.
Add the self-rising flour and 1/4 teaspoon cinnamon.
Pour half the batter in a 12 oz cup. Add the apricots in the center then pour the remaining batter over this.
Now make the topping. In a small bowl combine the all-purpose flour, remaining sugar, butter, and cinnamon. Knead until crumbly in texture and sprinkle on top of the batter in the mug.
