Preheat oven to 360°F, with the fans turned up all the way. Line 2 baking sheets.
Using an electric mixer, beat the butter, 1/4 cup honey and vanilla, until creamy. Add the egg and the banana. If consistency is a bit uneven that's ok.
Gradually add the flour and milk, in small batches. When the batter is ready use a spoon to make equally sized cookies. Scoop them and place them evenly spaced on the baking sheet, as they will expand massively in the oven.
Bake for 15 minutes, and allow complete cooling on the rack before topping.
To prepare the topping, mix the cream cheese with 1 tbsp honey, put a dollop on each cookie and garnish with coconut and pistachios.
