Hot and Sour Shrimp Poke

This recipe uses Umeboshi plum vinegar. It is made from the brine used for Japanese pickled plums, which has wonderful sour and salty characteristics. The vinegar is considered to be alkalizing and is helpful for detoxing. Plain rice can be used and is a suitable substitute, but if you're feeling adventurous, the bamboo variety will be a tasty alternative. As an option, you can serve with seaweed salad.

Ingredients for seaweed salad:
Seaweed - 6 oz.
Sesame seeds - 1 tbsp.
Coconut aminos - 1 tbsp. (alternative: soy sauce)
Ginger - 1 slice
Chili oil - 1/2 tsp.
Ingredients for bowl:
Rice - 3 cups
Shrimp - 1 1/3 cup (cooked)
Onion - 1 cup (thinly sliced)
Lime juice - 2 tbsp.
Ume plum vinegar - 2 tsp. (alternative: red wine vinegar)
Vegetable oil - 1 tbsp.
Wasabi - 1/2 tbsp.
Tamari sauce - 1 tsp. (alternative: soy sauce)
Chili Garlic Steak and Macadamia Poke Bowl

Poke is usually a light and healthy dish, but it can be hearty too. If you are not a big fan of fish, try steak instead. This recipe uses fresh chilies, garlic and shallots, with steak served over jasmine rice.

Ingredients for bowl:
Steak - 2 cups shreds
Rice - 2 cups (Jasmine rice is best)
Sprouts - 1 cup (any microgreen of your choice)
Shallot - 1/4 cup (minced)
Macadamia nut - 1/4 cup
Garlic - 3 tbsp. (minced)
Cayenne pepper - 2 tbsp.
Tamari sauce - 1 tbsp. (alternative: soy sauce)
Vegetable oil - 1/2 tbsp.
Orange blossom water - a dash (alternative: fine zest/orange oil)
Ginger Chicken Poke

Black rice has recently gained popularity due to the incredible antioxidant properties that dark plant foods possess. Black rice has no coloring, the dark purple hue is its natural color. The taste is very similar to brown rice too. Paired with ginger and chicken, you're in for a treat with this poke dish.

Ingredients for main dish:
Black rice - 3 cups
Chicken breast - 2 cups (cooked and diced)
Scallion - 1/4 cup (chopped)
Garlic - 1 tbsp. (minced)
Tamari sauce - 1 tbsp. (alternative: soy sauce)
Vegetable oil - as needed
Ginger - 1 1/2 tsp.
Orange blossom water - a dash (alternative: fine zest/orange oil)
Ingredients for seaweed salad:

Vegan Paleo Rainbow Carrot Poke

This delicious poke bowl is made from kelp noodles, also referred to as glass noodles. Kelp noodles are a good source of Iodine, an essential nutrient for thyroid function. They have no flavor, allowing them to absorb any flavor you infuse into them. You can switch the carrots up with rainbow carrots - which will provide you with a healthful punch of anthocyanins (the antioxidants that give the purple and red carrots their color).

Ingredients for bowl:
Carrot - 2 cups (cubed)
Sea beans (salicornia) - 2 cups (alternative: salted green beans)
Glass noodles - 2 cups
Vegetable oil - as needed
Sesame seeds - 2 tbsp. (black sesame works as well)
Coconut aminos - 1 tbsp. (alternative: soy sauce)
Wasabi - 1 tbsp.
Sesame oil - 1 tsp.
Chili oil - 1 tsp.
