Kale Salad-Stuffed Avocado

Kale Salad-Stuffed Avocado
Ingredients for Salad-Stuffed Avocado:
Garlic - 2 cloves (minced)
Olive oil - 2-3 tbsp.
Kale - 2 cups (shredded)
Avocado - 1 (halved)
Carrots - 1
Salt and Pepper - to taste
Sumac - to taste
Method of preparing the Salad-Stuffed Avocado:
  1. Heat the oven to 400°F (200°C) and roast the carrot in the oven for 40 minutes with the peel on. Let cool and cut into small cubes.
  2. Cook the kale in a skillet with garlic and olive oil, until soft, about 5 minutes. Once done, stuff all ingredients in the halved avocado.
  3. Season with sumac, salt and pepper.
