Avocado Sauce

There's more to avocados than guacamole! Their creamy texture can be used for recipes across the board, from nutritious and hearty breakfasts, to scrumptious desserts. But have you ever thought to pair it with pasta? Instead of the classic pesto sauce, opt for this more nutritious version.

Ingredients for sauce:
Pasta - 1 pack (any kind you like)
Avocado - 2 (halved and pitted)
Garlic - 1 clove (minced)
Scallion - a handful (chopped)
Lemon juice - from 1 lemon
Olive oil - 1/4 cup
Salt and Pepper - as needed
Parsley - 1/4 cup leaves (chopped)
Parmesan cheese - for garnish
Method of preparing the sauce:
  1. Cook the pasta in salted boiling water, 6-8 minutes until chewy but not too soft. Drain but keep 1/2 cup of the water.
  2. Pulse the rest of the ingredients in a blender or manually mash together until smooth. Mix in the 1/2 cup pasta water.
  3. Plate the pasta and pour the sauce over. Garnish with extra parsley and some parmesan cheese.
