Stuffed Rigatoni

Sugar, spice, and everything nice! This Italiano dish has it all - the pasta, the marinara sauce, three types of cheese, and a whole lotta love. The perfect casserole for when you feel like Italian, but also want to stay home.

Ingredients for rigatoni:
Pasta rigatoni - 3/4 Ib. (cooked al dente)
Salt and Pepper - as needed
Ricotta cheese - 16 oz
Spinach - 10 oz (chopped)
Garlic - 2 cloves
Eggs - 1
Parmesan cheese - 1/2 cup
Red pepper flakes - to taste
Lemon zest - from 1 lemon
Mozzarella - 1 1/2 cups (shredded)
Method of preparing the rigatoni:
  1. Preheat oven to 350°F and grease a deep baking sheet.
  2. Scatter the pasta on the sheet. In a large bowl, mix together ricotta, spinach, egg, Parmesan, garlic, lemon zest, and seasonings.
  3. Transfer the mixture into a piping bag or a plastic bag, and cut a hole in the corner.
  4. Spread the pasta sauce on the bottom of the sheet. Fill the pasta with the filling and arrange on top. Top with more sauce and mozzarella.
  5. Layer another layer of pasta and spread more sauce on top. Sprinkle with Parmesan and bake until top is crispy and sauce is bubbling, about 30 minutes.
