Microwave Chilaquiles

I always thought the microwave was an appliance for thawing frozen goods or warming up leftovers. Then I discovered microwave recipes! This lunch in a mug is the perfect opportunity to make use of leftovers from taco night with this Mexican-themed meal.

Ingredients for Chilaquiles:
Egg - 1
Milk - 1 tbsp.
Salt - to taste
Ground black pepper - to taste
Cheddar cheese - 1 tbsp.
Salsa - 1 tbsp.
Sour cream - a dollop
Queso fresco - a pinch
Green onions - a pinch (chopped)
Method of preparing the Chilaquiles:
  1. In a coffee cup, beat an egg and milk with a fork. Sprinkle with salt and pepper for taste.
  2. Add in the cheddar and stir to coat.
  3. Break 4 tortilla chips into small pieces and stir into the mix. Add the salsa.
  4. Microwave for 1 minute and 10 seconds.
  5. Garnish with a tortilla chip, sour cream, queso fresco, and chopped green onion.
