Cake Mirror Glaze

The glossy effect is created mainly thanks to the gelatin. It will only work on fully frozen, hard, solid cakes. We must warn you in advance- the mirror glaze is not forgiving. Any smallest dent or bubble will show magnified when glazed over, and you can't fix it! So don't strive for perfection, but rather for progression. The taste will be the same, we promise! The quantities will be good for about 4 cakes.

Ingredients for glaze:
Water - 1/2 cup
Sugar - 1 1/2 cups
Gelatin - 1 tbsp.
White chocolate - 12 oz. (chopped)
Vanilla Extract - 1 tbsp.
Food coloring - optional
Method of preparing the glaze:
  1. Heat the water, sugar, and condensed milk. Once everything's dissolved, remove from heat. Stir in the vanilla and gelatin.
  2. Pour the mixture onto the chocolate. Allow it to melt slowly for 5 minutes. Blend until smooth and add food coloring.
  3. Strain through a sieve and let cool, stirring often to prevent a film from forming. We advise you put the bowl in an ice bath to accelerate cooling.
  4. When the mixture is just a little warmer than room temperature, it's ready.
  5. Pour the glaze over the cake in a circular motion. Don't touch it once it's poured as it will set as soon as it touches the cake.
Chef's Tip:
This glaze would work best in an ice cream cake that's been made in a sleek silicone mold.
