Mushroom Ricotta Bruschetta

The idea of eating right may be a bit daunting sometimes. There's also the common misconception that making healthy food is expensive and complicated. I believe we can all prepare healthy meals with ease, without compromising on taste and flavor. I mean, how can anyone go wrong with mushrooms and cheese?

Mushroom Ricotta Bruschetta
Ingredients for brischetta:
Walnuts - a handful
Bread - 3 slices (toasted)
Ricotta cheese - 3 oz.
Oregano - as needed
Salt and Pepper - as needed
Olive oil - as needed
Method of preparing the brischetta:
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Slice the mushrooms thickly.
  2. Toast the bread. Mix together the ricotta, walnuts and oregano In a bowl.
  3. Spread the cheese mix on each slice of toast, top with the mushrooms.
Chef's Tip:
You can garnish with coarse black pepper and tyhme.
