Kentucky Hot Brown Sandwich

In France, hungry restaurant-goers can order the famous Croque Madame or Croque Monsieur cheesy breakfast sandwich. In Kentucky, the same hungry crowd can enjoy an even more decadent yet similar sandwich - the Kentucky Hot Brown. Like its French counterparts, the Kentucky Hot Brown is an open-faced sandwich.

A slice of toast is piled with roast turkey, tomatoes, and plenty of creamy mornay sauce. All this goodness is then broiled in the oven and topped with crispy bacon. But you don't need to travel all the way to Kentucky to enjoy this indulgent treat - make it at home.

Kentucky Hot Brown Sandwich
Ingredients for Kentucky Hot Brown Sandwich:
Sandwich bread - 4 thick slices (toasted)
Roast turkey - 10 oz. (deli-sliced)
Whole milk - 1 cup
Heavy cream - 1/2 cup
Pecorino cheese - 1/4 cup (grated, Parmesan works great too)
Tomato - 1 (thinly sliced)
All-Purpose flour - 2 tbsp.
Unsalted butter - 2 tbsp.
Parsley - 1/2 tsp. (freshly chopped)
Nutmeg - 1/8 tsp.
Salt and Pepper - to taste (optional)
Chives - 1/2 tsp. (freshly chopped)
Method of preparing the Kentucky Hot Brown Sandwich:
  1. Melt the butter in a saucepan on medium heat. Immediately once it's melted whisk in the flour until smooth and slightly darker. This should take around 1 minute.
  2. Add the milk and the cream to the same saucepan, whisking continuously until the mixture thickens up a bit. This should take about 3-5 minutes.
  3. Remove from heat, and mix in the grated cheese, salt, pepper, and nutmeg. Continue mixing until all of the cheese melts and the sauce is completely smooth.
  4. Preheat the oven to 400°F (200°C). Prepare a baking sheet with aluminum foil.
  5. Bake the bacon on one sheet for 12 minutes or until crispy and brown. When it's ready, move the cooked bacon to a plate lined with paper towels.
  6. Arrange 2 slices of toast on the baking sheet. Pile the sliced turkey on the toast, then top with two slices of tomato. Season the sandwiches with salt and pepper.
  7. Preheat the broiler and set the oven rack 5 inches away from the broiler. Generously spoon the warm sauce over the two toasts. Use more than you think you'd need, it's okay if the sauce is spilling over into the pan. Broil the sandwiches for 3-5 minutes. The sauce should be bubbling on the edges and be partially browned.
  8. Transfer the ready sandwiches to a plate with a spatula. Ladle any remaining sauce onto the plate. Cut the 2 pieces of toast you reserved earlier in half and place on the side of the plate to dip into the sauce. Top each sandwich with 2 slices of bacon. Garnish with chopped parsley.
