Easy Pickled Red Onions

These easy-to-make pickled onions make an excellent addition to any sandwich, salad, or meat dish. They're sweet, tangy, and extremely refreshing, and they're sure to become a frequent feature of every potluck or barbecue you hold! Best of all, you only need a few simple ingredients to make them.

Easy Pickled Red Onions
Ingredients for Pickled Red Onions:
Apple cider vinegar - 1 1/3 cup
Sugar - 3 tbsp.
Salt - 1 tbsp.
Black peppercorns - 6 (optional)
Bay leaf - 1 (optional)
Red onions - 3 small (sliced into rings)
Method of preparing the Pickled Red Onions:
  1. In a small pan, combine the vinegar, sugar, salt, peppercorns, and bay leaf. Bring the liquid to a simmer and cook for 1 min, or until the sugar and salt have dissolved. Then remove the pan from heat.
  2. Boil a pot full of water. Place the sliced onions into a sieve or colander. Pour the hot water over the onions and wait for the water to drain well. Let them cool down for a bit.
  3. Place the onion rings into a resealable container or jar. Pour the warm vinegar mixture over the onions and seal the container. Let it cool and then chill in the fridge for 2 hours.
  4. These pickled onions will stay good for around 2 weeks in the fridge.
