Zucchini Pizza Boats
Ingredients for Zucchini Pizza Boats:
Zucchini - 6 medium (sliced lengthwise)
Tomato sauce - 1 (8 oz.) can
Parmesan cheese - 1/4 cup
Breadcrumbs - 1/4 cup
Mozzarella - 2 cups (shredded)
Canned sliced black olives - 1 (2 oz.) can
Method of preparing the Zucchini Pizza Boats:
  1. Preheat your oven to 425°F (220°C). Line a baking sheet. Use a spoon to scoop out the flesh from the zucchini. Leave about 1/2-inch around the edges and save the flesh in a bowl. Arrange the zucchini on a baking sheet.
  2. Chop the zucchini flesh and toss in a bowl with tomato sauce, parmesan cheese, Italian seasoning, and bread crumbs. Stuff the zucchini and sprinkle with mozzarella and olives.
  3. Bake for about 20 minutes or until the cheese has melted and browned. If you like firmer zucchini, bake for no longer than 15 minutes.
