Baked Cod Piccata with Asparagus
Ingredients for Baked Cod Piccata with Asparagus:
Asparagus - 1 lb.
Water - 1/4 cup
Cod fillet - 1 lb. (cut into 4 pieces)
Lemon juice - 2 tbsp.
Lemon-pepper seasoning - 1 tsp. (salt-free)
Garlic powder - 1/2 tsp.
Butter - 2 tbsp. (cubed)
Capers - 2 tsp.
Parsley - to taste
Method of preparing the Baked Cod Piccata with Asparagus:
  1. In an ungreased baking dish, place the asparagus and add water. Arrange the cod over the asparagus. Now sprinkle with lemon juice, lemon pepper and garlic powder. Dot with butter and sprinkle with capers.
  2. Bake uncovered at 400°F (200°C) for 12-15 minutes. You will know it's done when the fish flakes easily with a fork and the asparagus is tender. Sprinkle with parsley if you want.
