Chicken Collard Wraps

What a heavenly combination of chicken, greens, and juicy fruits! Wraps like these work as a delicious dinner starter or a filling and healthy lunch for two.

Ingredients for Chicken Collard Wraps:
Chicken breast - 2 (grilled and cut into strips)
Strawberries - 6 (thinly sliced)
Mango - 1 (peeled and cut into thin strips)
Cucumber - 1/2 (thinly sliced)
Avocado - 1 (sliced)
Fresh mint leaves - around 20
Collard greens - 4 (stems removed)
Coconut cream - 2 tbsp.
Almond butter - 2 tbsp.
Lime - 1 (juiced)
Ginger - 1 tbsp. (grated)
Garlic - 1 clove (crushed)
White wine vinegar - 1 tbsp.
Tahini - 1 tbso.
Salt - 1/8 tsp.
Applesauce - 2 tbsp.
Chili - 1 (chopped)
Method of preparing the Chicken Collard Wraps:
  1. Prep the veggies, fruit, herbs, and chicken, dividing them equally between the 4 collard leaves.
  2. Fold the bottom edge over the filling and follow by folding the sides.
  3. Roll tightly and secure with toothpicks.
  4. Cut the wraps in half.
  5. In a food processor, combine the coconut cream, almond butter, lime juice, ginger, garlic, vinegar, sesame oil, tahini, salt, applesauce, and chili, and blend until smoothly combined into a creamy sauce.
  6. Pour the sauce into a dipping bowl and serve with the wraps.
