Korean Potato Snack

Are you familiar with the Korean kitchen? We're all so very accustomed to the Chinese, Japanese, or even Thai kitchen that we forget there are other options to explore. This recipe is great for any time of the day, and we're sure the kids will love its chewy texture and cute mushroom shape too. Good luck!

Ingredients for potato bites:
Potato - 2 (peeled)
Potato starch - 2 cups
Water - 2/3 cup or less
Garlic - 2 cloves (peeled and chopped)
Chili powder - 1 tbsp.
Soy sauce - 4 tbsp.
Green onions - 1 tbsp. (chopped)
Vegetable oil - 3 tbsp.
Method of preparing the potato bites:
  1. Cook the potatoes until soft. You can do it in water or in the microwave using an appropriate bowl and cooking for 7 minutes.
  2. Mash the potatoes and let cool a bit. Add the starch and knead.
  3. Add the water little by little, kneading between each time. Finish with a steady dough that doesn't crack- you may not need all the water.
  4. Boil salted water in a pot. Knead small balls from the dough. You can shape them into mushrooms, as shown in the video.
  5. Once the water boils, throw the potato balls inside for about 3 minutes. When they're ready, the balls will float. Transfer into a bowl.
  6. Let the vegetable oil boil in a small saucepan. Add the garlic, chili powder, sugar, soy sauce, and chopped green onion to the potato balls.
  7. When the oil is shimmering pour it over the potatoes and mix everything together. Mix and enjoy!
