Make a pasta-less version of the mac-and-cheese you've always wished for. We promise it is just as divine, plus it's easier to make! This dish makes for a perfect gluten-free meal, using cauliflower instead of pasta.
Method of preparing the Gluten-Free No-Mac and Cheese:
Melt 3 tablespoons of butter in a medium saucepan over medium-high heat. Fry the onion until lightly browned. Add the garlic and cook for 1 minute.
Then, add the coconut flour and stir continuously until lightly browned (for around 5 minutes).
Stir in the coconut milk, mustard, and salt, and stir constantly until they come to a boil. Remove from heat and add the cheddar and cauliflower and mix them in the mixture.
Then, pour it into a baking dish. Combine the parmesan, flaxseeds, and the remaining 2 tablespoons of butter in a small bowl. Use this mixture to top your casserole.
Place in the oven and bake until bubbling or lightly browned (around 30 minutes).
