Crispy Chicken With Herb Sauce

A classic chicken seasoning for those mid-week days. The red wine vinegar gives it a small tinge of pungent taste. This will go well with white wine, a hearty risotto and your favorite choice of company.

Ingredients for chicken:
Boneless chicken - 1 (quartered, backbone removed)
Olive oil - as needed
Salt and Pepper - as needed
Red wine vinegar - 2 tbsp.
Basil - 1 cup (or tarragon)
Garlic - 1 clove (minced)
Red pepper flakes - 1/2 tsp.
Method of preparing the chicken:
  1. Preheat the oven to 450°F (230°C). If the chicken is whole, make sure it is fully thawed and quarter it. Pat dry with towels and place on a lined baking dish.
  2. Rub the chicken with 1 tablespoon oil. Season the chicken with salt and pepper. Roast for 30 minutes.
  3. In a food processor blend the sauce. Add the basil, garlic, red pepper flakes, ¼ cup olive oil and red wine vinegar. Pour the sauce over the chicken and let it rest for 10 minutes before serving.
