If you're gluten-intolerant or are willing to keep your diet low in carbs, try out this mouth-watering casserole. It uses cauliflower instead of potatoes or pasta, acting as an alternative to baked macaroni or loaded baked potatoes.

Ingredients for Cauliflower Casserole:
Cauliflower - 2 1/2 cups (cooked)
Sour cream - 1 cup
Cheddar cheese - 3/4 cup (shredded)
Green onions - 3 (finely chopped)
Bacon or turkey bacon slices - 3-6 (cooked and crumbled (optional))
Salt and Pepper - to taste
Method of preparing the Cauliflower Casserole:
  1. Pre-heat oven to 350°F/ 180°C.
  2. Chop the cooked cauliflower into small bits.
  3. Mix half of the sour cream, half of the cheddar cheese, half of the green onions, half of the bacon, and salt and pepper. Combine the cauliflower with this mixture.
  4. Place everything in a medium baking dish and add the remaining cheese and bacon on top. Bake for 20 minutes.
  5. Sprinkle the remaining green onions before serving.
